Help!

Ok, so we eat lots of onions and bell peppers in this house. We have fajita’s like twice a week. But my question is, what else is good to make with bell peppers?

Seriously, we got orange, red, purple, green, yellow. So tasty, too, but I  am just looking for another thing to do. Maybe stuffed peppers?

And just because these were pretty too… apples!

These babies are huge.

I am planning on making apple cobbler for Sabbath Lunch tomorrow. We’re having Paul’s mother join us for lunch. Making a pork loin roast. Mmmmmm.

Facelift and Saturday Stuff

I gave the blog a little facelift! I was kind of bored of the really clean setup I had before. The only thing is that I can’t get rid of the huge fonted “KNITTYBUTTON” right at the top. It’s the only thing I don’t really like about this one, but otherwise I’m pretty fond of how it turned out. What do you think?

I just can’t get enough of these sunflowers. I wish I had more of them to spread the joy around the house. Does anyone (Mom?) know what variety those are? I can’t ever remember seeing crazy ones like that before!

The Accidental Awesome Dinner

Tonight’s dinner was a thrown together mish mash of what we had on the fridge.

I had an onion, tomatoes, eggplant and cucumber.  I chopped them all up into bite size pieces and tossed them into the oven for 20 minutes, then tossed them all into a pan and let it all simmer for about 20 more minutes and then added a bit of cream cheese.

I served with quinoa, delish.

It was a tasty, tasty, tasty dinner.

The veggies can be substituted with just about anything you’ve got in your fridge, as long as you’ve got tomatoes. The quinoa could be substituted with rice, cous cous, pasta, whatevs.

Farmers Market

This morning we went to the farmers market, got some goodies.

I had one of these for lunch. It was sooo good.

Also some BIG beefsteak tomatoes and made a basil, Parmesan, tomato sauce. It’s simmering on the stove right now. Seriously, some of these are the size of my hand. They are large and juicy! And our house smells yummy.

I love Saturdays! We (and by we I mean Paul) got our washer and dryer hooked up today. Awesome. And then we did a celebratory load of laundry! Also got rid of some furniture we didn’t need anymore and finally unpacked the last box! I know we’ve lived here for a few months, but the ‘spare bedroom/craft room/office/homework room’ has been sort of a catch-all room. But no more! I’ll try to post some pictures sometime soon.

Pantry

I’ve been collecting glass storage containers. I got a few at garage sales, some at Ross and then some more when I went to Ikea last week. Now that I have a pantry I’ve got a place to put them!

Can you tell we like pasta? Ha.

Summer dinners

It’s always hard for me to think of things to make for dinner in the summer. In the winter and fall it’s much easier, soups, roasts, pot pies, hot pasta dishes, etc. But in the summer I usually don’t want something very heavy, or warm for that matter. Enter: pasta salad.

We just threw in what we had on hand, which today happened to be olives, cucumbers, ham, onions and tomato, topped with a squirt of Italian salad dressing- but now I am imagining all sorts of combination that I could make…

And it was delish! And perfect for a hot Idaho evening, when you’re not in the mood to slave over a hot stove.

P.S. I am on the last legs of this cable-knit brown sweater, 1/2 way done with the hood, then just the seaming is left! Can’t wait for it’s grand debut. I think this one might go in the “keeping-for-my-future-children” box…. or maybe I’ll just have to make another. I really, really, really like this pattern. Lots.

In the kitchen.

I’ve spent alot of time in the kitchen lately.

We made kale chips. Unfortunately they were way too salty. Yech. The few that managed not to get too salty were really good, though. I’ll have to try them again.

A word to the wise; don’t be generous with the salt.

Also made some cookies! The no-bake kind, since my house was already hot today, I didn’t want to have my kitchen even hotter.
