What we did with all those peppers…

Thanks, you guys! I never knew that having a blog could be so helpful. Got lots of ideas on how to prepare and eat up those yummy peppers! We still have a few more, and farmers market is only 3 days away, so I will definitely be buying more to try some more of your recipes!

We ended up making Quinoa Stuffed Peppers (yum!)

Uh, this looks kind of gross, but it wasn’t. It’s a super-duper easy recipe.
Saute 2 stalks celery and 1 medium onion in olive oil for about 5 min
Add 1 can of drained black beans (or any kind of beans, really, I suppose)
1 large diced tomato
Add 2 cups water and 3/4 cup quinoa (or you could substitute rice, couscous, even groundbeef or sausage, but if you add meat don’t add the water)
Bring to boil, let simmer for 20 minutes, or until quinoa is soft and most of the water is absorbed

Then, gut your peppers! The poor yellow one had to go sideways because he was not able to stand on his own.

Then, stuff them! I used a ladle to get it in there, but I did end up spilling all over the edges…

Then add some shredded cheese to the top, if you want. (Cheese is always a yes in this household)

Then bake at 350 degrees for 1 hour. (I cheated and baked them at 375 for 45 minutes, we were starving at that point since we didn’t start making it until around 5:30, and it was bordering 7:00pm….)

They weren’t super filling, so next time I might add more quinoa, or possibly some ground beef (that might make the husband happy) just to make them stick with you a bit longer. But I thought they were really, really tasty!
